As winter settles in, why not start planning for summer? This summer-inspired ale, with its smooth key lime infusion, adds a touch of sunshine to every bite, making it a dish worth savoring while dreaming of warmer days.

Ingredients

For the Fritters:

  • 1 cup conch meat, finely chopped (substitute with shrimp or crab if unavailable)
  • 1/2 cup Bimini Key Bahama Style Ale
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 egg, beaten
  • 1/4 cup whole milk
  • 1/2 cup red bell pepper, finely diced
  • 1/4 cup green onions, finely sliced
  • 1/4 cup white onion, finely diced
  • 1 tsp garlic powder
  • 1/2 tsp cayenne pepper (optional, for heat)
  • Salt and pepper, to taste
  • Oil, for frying (vegetable or canola)

For the Dipping Sauce:

  • 1/2 cup mayonnaise
  • 2 tbsp lime juice
  • 1 tsp hot sauce (adjust to taste)
  • 1/2 tsp garlic powder
  • 1 tsp honey
  • Salt and pepper, to taste

Instructions

1. Prepare the Batter

  1. In a large bowl, whisk together the flour, baking powder, garlic powder, cayenne pepper, salt, and pepper.
  2. Add the egg, milk, and Bimini Key Bahama Style Ale, stirring until just combined. The batter should be thick but pourable.
  3. Fold in the chopped conch meat, bell pepper, green onions, and white onion.

2. Make the Dipping Sauce

  1. In a small bowl, whisk together the mayonnaise, lime juice, hot sauce, garlic powder, and honey.
  2. Season with salt and pepper to taste, then refrigerate until ready to serve.

3. Fry the Fritters

  1. Heat about 2 inches of oil in a deep skillet or heavy-bottomed pot to 350°F (175°C).
  2. Using a spoon or small scoop, drop the batter into the hot oil, working in batches to avoid overcrowding.
  3. Fry for 2-3 minutes on each side, or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.

4. Serve

  1. Arrange the fritters on a platter and serve warm with the lime dipping sauce on the side.
