Grilled Shrimp Kabobs with White Marlin Pale Ale and Spicy Red Dipping Sauce

Ingredients
For the Kabobs:
- 1 lb large shrimp, peeled and deveined
- 1 bottle White Marlin Pale Ale
- 1 cup pineapple chunks
- 1 red bell pepper, cut into 1-inch pieces
- 1 red onion, cut into wedges
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Salt and pepper, to taste
- Wooden or metal skewers
- Chopped chives, for garnish
For the Spicy Red Dipping Sauce:
- 1/2 cup ketchup
- 2 tbsp sriracha or hot sauce
- 1 tbsp honey
- 1 tbsp lime juice
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper (optional, for extra heat)
- Salt, to taste
Instructions
1. Marinate the Shrimp
- In a bowl, combine the White Marlin Pale Ale, olive oil, smoked paprika, garlic powder, salt, and pepper.
- Add the shrimp and let it marinate for 20–30 minutes in the refrigerator.
2. Prepare the Skewers
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Thread the shrimp, pineapple chunks, red bell pepper, and red onion onto the skewers, alternating for color and flavor.
3. Make the Spicy Red Dipping Sauce
- In a small bowl, mix the ketchup, sriracha, honey, lime juice, smoked paprika, and cayenne pepper.
- Taste and adjust seasoning with salt or additional spice as desired. Set aside.
4. Grill the Kabobs
- Preheat your grill to medium-high heat and lightly oil the grates.
- Place the skewers on the grill and cook for 2–3 minutes per side, or until the shrimp are pink and opaque and the pineapple has a slight char.
5. Garnish and Serve
- Transfer the cooked kabobs to a serving platter and sprinkle with chopped chives for a vibrant presentation.
- Serve with the spicy red dipping sauce on the side.
