There’s nothing quite like crispy, golden onion rings to elevate your snack game or side dish spread. When you add the rich, citrusy twist of Fin City Brewing’s Slow Tide American Amber to the batter, these onion rings go from good to irresistible. The roasted malts and subtle toffee and caramel notes of Slow Tide, paired with a clean, smooth finish, make this the perfect beer for creating a batter with depth and flavor.

Ingredients

For the Onion Rings:

  • 2 large sweet onions, sliced into 1/2-inch rings
  • 1 1/2 cups all-purpose flour, divided
  • 1/2 cup cornstarch
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper (optional, for heat)
  • 1 1/2 cups Slow Tide American Amber
  • 1 large egg, beaten
  • Salt and pepper, to taste
  • Oil, for frying (vegetable or canola)

For Serving:

  • Ketchup, ranch dressing, or your favorite dipping sauce

Instructions

1. Prepare the Onion Rings

  1. Slice the onions into rings and separate them. Soak the rings in a bowl of cold water for 10 minutes to reduce their sharpness. Drain and pat dry.

2. Make the Batter

  1. In a large mixing bowl, combine 1 cup of flour, cornstarch, smoked paprika, garlic powder, cayenne pepper, salt, and pepper.
  2. Gradually whisk in the Slow Tide American Amber and beaten egg until the batter is smooth and thick enough to coat the back of a spoon. Let the batter rest for 10 minutes.

3. Pre-Coat the Rings

  1. Place the remaining 1/2 cup of flour in a shallow dish. Toss the onion rings in the flour to lightly coat them—this helps the batter stick.

4. Heat the Oil

  1. Heat about 2 inches of oil in a heavy-bottomed pot or deep fryer to 350°F (175°C).

5. Fry the Onion Rings

  1. Dip the floured onion rings into the batter, letting any excess drip off.
  2. Carefully place them into the hot oil, working in batches to avoid overcrowding. Fry for 2-3 minutes on each side, or until golden brown and crispy.
  3. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt while still hot.

6. Serve

  1. Arrange the onion rings on a platter and serve warm with your favorite dipping sauces.
